Alright so I bought another GT. This one has a massive over fueling problem. Seems possibly changeover related. Pulls fine at low rpm. Between 2500-4500 or so depending on load it'll bog like crazy and spew a tonne of fuel out the exhaust. Sometimes I can get it through and it'll pull clean from 4500 to redline but it's an absolute dog to get moving without crawling or covering the cars behind me. Used half a tank to drive it the 100km back home.
Really don't know much at all about these setups, plan is of course to single convert in the near future but as its currently registered I'd like to suss this issue in the short term. Any help is greatly appreciated.

Yep well don't I feel dumb, completely skipped looking at anything normal and assumed it had to be an issue with the TT :P. Chucked in a spare purple maf and it's running far better. Has chucked a code 66 a couple times and gone into limp mode so it's still not perfect but at least it's now drive able. Guess I'll go through the bbod etc and see what happens. Cheers mate
